Ingredients
2 Hosui Asian pears
1 cup heavy cream
2 tbsp powdered sugar
4 tbsp cocoa powder
Zest of 1 orange
⅓ cup pistachios, chopped
⅓ cup pepitas
2 tbsp butter
2 tbsp sugar, granulated
1 tsp salt
Fresh mint
Instructions
Roasted Hosui Pears:
Cut the Hosui Asian Pears in half lengthwise and core. Bake at 350F for 20-30 min or until soft. Let cool prior to serving.Chocolate Orange Whip:
Combine the heavy cream, powdered sugar, cocoa powder and orange zest in a stand mixer and whip until medium peaks form. Set aside in the fridge.Pistachio Pepita Crumble:
Melt the butter in a sauté pan over medium heat. Stir in the pepitas and chopped pistachios, and toast for 5 minutes. Stir in the sugar and salt. Let cool on a sheet tray with wax paper.To Arrange:
Spoon the Chocolate Orange Whip evenly amongst four bowls. Place a Roasted Hosui Pear in the center. Sprinkle the Pistachio Pepita Crumble around the outside of the pear. Garnish with mint and enjoy!
