Ingredients

  • Sweet potato

  • 1 serving bbq pulled chicken or pork

  • Sliced peaches, with or without the skin

  • Extra bbq sauce

Instructions

  1. Cook the sweet potato. We use the cheater way and puncture the potato with a fork several times before putting it in the microwave for 8-10 minutes.

  2. Once cooked, slice the potato long ways and open it up. Be careful, the potato is going to be hot.

  3. Top with pulled pork or chicken. If wanting a quick meal, we recommend using the Jack Daniel’s package that you can throw in the microwave. You also can throw pork into the slow cooker or instant pot with a few cups of rootbeer and a full bottle of bbq sauce, if you’d rather make it yourself.

  4. Add sliced peaches, with or without the skin, on top and drizzle with extra bbq sauce. Enjoy!
